Who says you need lettuce leaves to make a salad? This fruit-based salad bowl is just the thing for lunch on a hot summer's day in Sydney when the mercury is pushing +40c. Each bite is a juicy burst of refreshing flavour with the mint and feta complementing the sweetness of the fruit. I've made it using basil instead of mint and its just as delicious. Definitely a recipe to save!
This is one of my absolute favourite summer salad recipes and bursting with both sweet and savoury flavours blending in perfect harmony and makes for a super tasty alternative to traditional salads. Its made without any lettuce and instead relies on fresh chunks of juicy watermelon, high-fibre blueberries, refreshing mint and the tangy zip of feta cheese for flavour.
I love using anti-inflammatory mint leaves in my recipes as its so soothing and helps reduce any irritations or inflammation in the stomach. Mint also helps relieve indigestion making a fabulous homeopathic remedy for tummy troubles. Consuming wholefoods that help heal the body, as you may have noticed, are a staple in the Eat Nourish Glow kitchen.
Adding fruit to salads is a great way to boost your body and increase your intake of essential vitamins and minerals. The blueberries in this recipe provides a whopping 24%t of your recommended daily allowance of vitamin C while watermelon is deeply hydrating and is a rich source of an amino acid called citrulline that can lower your blood pressure. You'll definitely be loving up your body with this fruit-based salad recipe!
Using high-fibre fruits like berries in as many meals as possible is great way to naturally suppress your appetite and feel fuller for longer. This salad recipe is such a healthy dish to make for summer BBQs or gatherings with friends. You can tuck into a good big bowlful or plateful and help prevent overeating by filling up on the good stuff. Then just stick to the BBQed protein that will be on offer. Clean eating can be just as simple as that!
This salad recipe is originally from fellow recipe creator and food blogger, Ashley Walterhouse of Fit Mitten Kitchen, and only uses six wholefood ingredients. Its the perfect salad to throw together when you're short on time but want to bring a plate that is a little less ordinary. Its been a huge hit at my family gatherings.
If you end up making this wholefood recipe, I'd love to hear and see how your version turned out. Drop me a photo and your reviews in the comments!
Healthy + happiness,
