Oh, its nearing springtime here in Sydney and that time of year when we're all thinking of flocking back to the beach. And that means pealing back the winter layers for shorts and swimmers instead of jumpers. So if you want a light and delicious recipe to ring in the beach season, this is it!
Low carb skewers make such a simple and high protein meal or snack. They are so easy to make with a variety of veggies, fruits, and lean protein. All you need is bamboo or steel skewers and your choice of ingredients. Chop the ingredients roughly and pierce to slide on the skewers. Season and bake or grill for a tasty and nutritiously low carb feed.

Skewers super simple to meal prep and provide an easy, healthy low carb meal with whatever fresh veggies and meat or vegan protein you have on hand.
lean protein: chicken and beef are the most commonly used for skewers. However, you can also try lamb, prawns, salmon, tofu, and even cheeses like haloumi.
vegetables: colourful veggies like red onions, red and yellow capsicums, eggplant, tomatoes, yellow squash and zucchini are popular favourites.
fresh fruit: yep, you can also use fleshy fruit like mango, pineapple, strawberries or kiwi which are fabulous pinned in between meat and vegetables on the grill.
fresh and dried: herbs provide extra flavour and create a lovely presentation.
There are no rules to making skewers, so you can mix and match all kinds of ingredient combinations to create your own pairings. The experimentation is half the fun!

Chicken & Capsicum Skewers Recipe
Skewers make a fabulous main meal or light snack fresh off the grill or even the next day straight from the fridge. If you have never made these before, don't be intimidated. I promise they are simple to make and offer so many creative ways to make and present them.
Chicken & Capsicum Skewers Recipe
Ingredients
1-2 fillets chicken, diced, organic
1/2 yellow capsicum, chopped roughly
1/2 red onion, chopped roughly
3-4 button mushrooms, chopped roughly
1 tsp lemon juice, freshly squeezed
2 tsp dill, finely chopped
1 tsp Italian spice blend
2 tbsp olive or coconut oil, organic
salt and pepper to season
Method
In a large bowl, whisk the oil and seasoning together. Add the diced chicken and veggies to the oil and toss to coat evenly. Then begin to pierce and slide the chicken pieces onto a bamboo skewer, alternating with the veggies. Grill on the BBQ or in the oven until the chicken is cooked through and veggies begin to soften. Serve with a drizzle of lemon juice and sprinkling of leftover dill leaves. Creamy Dill Dip is optional.
Creamy Dill Dip Recipe
Ingredients
1 cup plain Greek yoghurt
3 tbsp cucumber, finely grated, skin off
1 tbsp fresh chives, finely chopped
1 tbsp vinegar, white
1/2 tbsp fresh dill or dill weed, finely chopped
1/2 teaspoon rock salt
Method
In a small bowl, add the cream and seasoning and stir well to combine. Sprinkle a little dill leaves over top for a edible garnish when serving.
Batch Cook & Meal Prep
Yes, you can batch cook this recipe. If you regularly meal prep veggies, all you need to do is create a mid-sized bag of pre-chopped veggies and store until needed later in the week. Freezing these also works but some like eggplant and zucchini can become a little soggy when defrosting and are best used fresh. Chicken or other meats can easily be chopped and frozen until needed and is well worth the prep time to make fast work of this recipe.
