Instagram is a mouth-watering sight for hungry eyes, and that's where I found the genius for today's Bali-inspired recipe. We literally have a bumper crop of papaya every year from our backyard trees, and I am always looking for new ways to serve it up. So when I saw a friend's reel of her recent Balinese adventures, these clever "boats" totally caught my eye.
These papaya breakfast boats are so quick and easy to make. The kids will especially delight in being served these (and making this recipe themselves). I love this recipe for those busy mornings when I want something wholesome and fast. It literally take less than 5 minutes to create and because papaya is high in fibre, makes a surprisingly filling meal.
Stuffed Papaya Brekkie Boats
Ingredients
1 papaya, organic, de-seeded
1/2 cup mixed berries, fresh or frozen
2 tbsp muesli, for topping
1 tbsp maple syrup (optional)
1 lime, just the juice (optional)
Cut the papaya in half, and scoop out all the black seeds. Stuff the hollowed insides with the mixed berries. Try them fresh or frozen. Top with a sprinkling of muesli and drizzle of syrup or lime juice.
Healthy Topping Ideas
Using fruit as a bowl or boat is so easy and makes for a fabulous presentation. You can try this same recipe using rock melons, pineapple, or mangoes and hollow the centre to make a bowl serving vessel. Top with fresh fruits or make it more of a meal by adding a scoop or two of Greek yoghurt, leftover smoothie or nice cream. I love adding a little crunch to mine with homemade granola, crushed walnuts, chia seeds, and roasted coconut flakes.
