Glowing Skin Acai Berry Bowls
If you are looking to go low carb but still eat healthy, this recipe is going to become a fast favourite! Bursting with flavour and goodness, zucchini boats take less than 20 minutes to make and can make fast work of meal prep if you already have pre-cooked mince to use up.
Ingredients
250ml plantbased milk ( I use @uluhye almond mylk)
1/2 frozen banana, gives a thick creamy texture
2 tsp acai superfood powder like @natureswayoz
1/2 cup mixed berries, frozen makes thicker smoothies
1/4 cup steamed cauliflower, cooled
2 tbsp cashew nuts, organic
2 tsp collagen (I use @nutraorganics Collagen Beauty)
2 tbsp chia seeds, high in fibre
Toss all the ingredients in a blender and process on high until a thick, creamy consistency. Enjoy served in a bowl with toppings such a vitamin-c rich berries and kiwi slices. Add a little crunch such as toasted coconut, homemade granola, crushed nuts and seeds.
Recipe Suggestions
This recipe is so easy and can be used with a variety of fruits and yes, even vegetables. Swap the berries for other antioxidant and vitamin-C rich foods such as guava, pineapple, greens, and organic spirulina powder (a super-rich edible algae). Try using steamed sweet potato instead of cauliflower which is full of another essential nutrient, fibre.
