While this salad bowl does not contain any greens, it is equally as nutritious as any bowl of greens. Made with high-fibre brown lentils, the recipe creates an earthy flavoured meal with a lovely kick of tangy feta and salty olives. The combination is surprisingly good and makes a fantastic protein bowl for my vegan friends if you swap out the cow feta for a plantbased version of the cheese.

Brown lentils are a powerhouse of nutrition for both vegans and meat eaters alike. The small brown legumes are a fantastic food choice if you are trying to lose weight, lower your cholesterol or eat healthier. Because lentils contain virtually no fat but are naturally high in dietary fiber, they tend to fill you up without adding unnecessary calories to your meal.
Lentil Salad Bowl With Olives & Feta
Ingredients
1/2 cup brown lentils, cooked
3 tbsp crumbled feta (vegan or goat)
3 tbsp kalamata olives
1/2 lemon (for flavouring)
1 sprig of fresh Thyme
Lentils have a reputation for causing flatulence in many people. A way to avoid this is to thoroughly rinse them before using them. I like to use a pasta strainer for this and give them a good wash, and pat them dry with a paper towel before adding to my salads.
In a serving bowl, add the rinsed lentils. Top with the feta, olives, and squeeze the lemon over top. Add the thyme for an edible garnish.
Batch Cook Recipe
You can make a batch of this simple almost vegan salad for the coming week and it'll keep for 2-3 days in the fridge in a sealed container. I like to make these in small mason jars by layering the ingredients in order of lentils, olives, and the feta on top. Save the lemon drizzle until you serve the salad.
